Lemon Ginger Blueberry Protein Muffins

Makes 2 large muffins / 1 serving

Ingredients

For the muffins

  • ½ cup cottage cheese
  • 1 large egg
  • ¼ cup Greek yogurt
  • ⅓ cup oat flour
  • ¼ cup fresh blueberries
  • Zest of ½ lemon
  • 1 tsp fresh lemon juice
  • ¼ tsp ground ginger
  • ½ tsp baking powder
  • ½ tsp vanilla
  • Pinch sea salt
  • 1 tbsp of sweetener of choice, either honey or maple syrup

To finish

  • 1 Lemon Ginger Turmeric Beauty f(x) Bite, crumbled
  • 1 tbsp pumpkin seeds, roughly chopped
  • Extra Greek yogurt, if needed to reach the final 30 g protein target

Instructions

  1. Preheat oven to 350°F / 175°C.
  2. Blend the cottage cheese, egg, Greek yogurt, lemon juice and vanilla until smooth.
  3. In a bowl, combine oat flour, baking powder, ginger, lemon zest and sea salt.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Gently fold in the blueberries.
  6. Divide between two large lined muffin cups.
  7. Bake for approximately 18–22 minutes, or until the centers are set. Allow to cool.
  8. Top the muffins with a little Greek yogurt and crumble the Lemon Ginger Turmeric Beauty Bite over the top.
  9. Finish with chopped pumpkin seeds and a little additional lemon zest.

Why it’s good for hair health:

Cottage cheese + Greek yogurt + egg: Create the protein foundation of the recipe. Adequate dietary protein is important because insufficient protein intake is a recognized nutritional contributor to hair loss. 

Blueberries + lemon: Both contribute vitamin C. Vitamin C is relevant nutritionally because it assists intestinal iron absorption. 

Pumpkin seeds: Bring iron and zinc into the recipe, giving us a useful whole-food complement to the protein-rich ingredients. Deficiencies in iron and zinc have been associated with some forms of hair loss, although evidence around supplementation in people without deficiencies is much less clear. 

Beauty f(x): Lemon Ginger Turmeric is crumbled over the finished muffins, so you get the flavor and functional ingredients without baking the Bite itself.
